Ingredients

  • 1 block of tofu, drained and pressed
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 carrot, julienned
  • 1 broccoli crown, cut into florets
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, sliced
  • 1/4 cup cashews, chopped
  • Cooked rice, for serving

Directions

  1. In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, and cornstarch to make the teriyaki sauce.
  2. Cut the pressed tofu into bite-sized cubes.
  3. In a non-stick skillet, heat vegetable oil over medium heat.
  4. Add tofu to the skillet and cook until lightly browned on all sides.
  5. Pour the teriyaki sauce over the tofu and stir to coat. Cook for an additional 2-3 minutes.
  6. Add garlic, ginger, bell peppers, carrot, and broccoli to the skillet. Stir-fry for about 5 minutes, until vegetables are tender-crisp.
